There's not long now until a brilliant new burger place opens a permanent restaurant in North Herts.

Burger purists Cawsburger have been busy putting the finishing touches to their Hitchin town centre eatery set to open very soon - and the acclaimed team behind the business have now opened up with their heartening story.

Nub News recently shared the popular burger makers' announcement that they are set to move into their own town centre restaurant that is as prime as their beef patties at the old Hillman's Burgers joint on Churchyard.

Having spent three years food blogging and eating the best burgers in London, Charlie thought it was time to bring amazing burgers to Hitchin. Matt Darwin was in the process of creating a brunch restaurant and they got chatting about Hitchin needing a serious burger - and Cawsburger was born.

The pair spent months during lockdown obsessing over creating the perfect beef patty - fast forward to the present day and if you throw that between the best brioche bun in London along with other simple, quality ingredients, you have what has been described as one of the best burgers in the UK.

The pair take up the story.

"Two years ago @thegroundworks asked us about doing a pop up night we'd been discussing the lack of good burger options in the area after having eaten some of the best in London such as @black_bear_burger @tuckaburgerand @bleeckerburger 

"So we decided to go with a burger night. We planned to have some mates down to Groundworks for a trial night which turned out to be the evening of the first lockdown!

"So the burger night was cancelled but we weren't defeated. We spent the first few months of lockdown trialing different beef blends, cooking styles, buns with @chapmansbutchers having burger tasting sessions.

"After a few months we finally felt we had created the perfect burger. So we got back in touch with Groundworks and as takeaways were still allowed to function during lockdown, we started pre order pick ups every other weekend.

"To our surprise [Hitchin] went mad for our beef and we were selling out 400-500 burgers in ten minutes - crashing the Groundworks website in the first few weeks!"

Previously Nub News has been salivating over their amazing Peanut Butter and Jelly burgers that have been rocking Hitchin with the burger kings also announcing that they will be offering Coq in a Bun at their new eatery.

The dynamic duo continued: "Two years later here we are, about to open our first site of hopefully many .

"And we couldn't have done it without our friends, family and all you amazing customers."
